Gewurztraminer Bollenberg 2024 at Yam* in Paris – a starry and exotic agreement

This 19th November 2025 took on a suspended look. To celebrate the 29th anniversary of Annabelle, all three left Orschwihr – Annabelle, Hippolyte & Quentin – to taste the cuisine of Adeline Grattard, at the Yama* (a Michelin star), in Paris. Once the door was crossed, time seemed to be bending: the restaurant carried them into an Asian universe all in nuances, guided by the advice of a tea sommelier and by the gaze of Marine Delaporte. The latter had chosen to honor the Gewurztraminer Bollenberg 2024 of the estate, served in accordance with the octopus sweet and sour.

The wine, that night, held its rank: a bright golden yellow dress, a nose of pink, fruit of passion and orange bark, crossed sweet spices, where generosity remained contained by the discipline of limestone. In the palate, the richness was framed by the freshness of the slope, with a sugar melted in a clear texture, signed by a fine bitterness of zest and a discreet salinity. A sensuality held by the stone, which found in the chef's kitchen an echo of rare precision.

In the middle of this gastronomic ballet, a gesture of great delicacy made the moment magical. Chef Grattard offered to take Hippolyte, only two months old, to the kitchen, in order to let her parents enjoy the tasting. The newborn remained there, peaceful as the waters of the Léthé, this river whose unstoppable calm seems to suspend the course of the world. He took his first steps in a starry kitchen, observing the brigade dealing with a serenity that made him the sweet attraction of the evening, captivating both guests and cooks.

Perhaps this early immersion into excellence will open up new horizons for him later. For the hour, the memory remains: that of a rare address where flavors and attentions join together to create the unforgettable.
