The gewurztraminer changes the register: he leaves the only aromatic register to enter the matter. Maceration gives him another voice. The nose mixes dried pink, orange bark, sweet spices, cumin seeds, black tea and a slight touch of resin, all placed on a bottom of fruit skin. In the mouth, the structure surprises: the tannins of skin bring relief, a shape of grain, while keeping a beautiful fluidity. The material is ample but digestible, the finish is dry, spicy, almost infused, with a slight noble bitterness that lengthens the wine. A gewurztraminer of character, more earthy than demonstrative, made for those who love gourmet maceration wines, at the table, on spices, world cuisines and bold chords.

Nebula explores the grey pinot from another angle: that of maceration, where the color becomes a little blurred and the contours gain in depth. In the nose, the ripe yellow fruits – mirabelle, queen-claude – come alongside apple skin, light honey, white tea and a fine note of smoke, like a veil. In the mouth, the texture is at the center of the talk: the tannins of skin draw a delicate grain, the material is full but held, with a touch sensation almost caressing. The finish is dry, prolonged by a discreet minerality and a fine bitterness that stretches the wine. QUASAR

Quasar is a muscat who chooses the oblique path: maceration gives it from the bottom without removing its light. The nose spreads away from the simple fresh grapes to the candied citrus fruits, white flowers, verbena, orange skin, pomegranate, on a slightly grassy background. In the mouth, one is far from easy: the material is serious, carried by tannins of skin that structure without weighing. Maceration brings relief, a dry stretch, almost saline, with noble bitterness that signs the finish and gives it a disconcerting drinkability. A muscat dauteur, more mineral than expected, which prefers tension to sweetness, thought for gastronomy.
