A deep dry gewurztraminer marc, on grape skin, spices and dried rose, with a long and slightly bitter finish.

With a square of dark chocolate (75%), a cigar, or some dried fruits and candied fruit
Tasting Comment
Dress: Crystal transparency, with a light radiance that evokes the purity and concentration of the marc.
Nose: Freshly pressed grape peel, dried pink, sweet spices (cardamom, ginger) with a sharp hint of marc and a discreet floral note. The gewurztraminer guesses, but in a more discreet, more essential register.
Mouth: Dry and firm attack, almost austere, then the material unfolds: depth of the marc, controlled heat, dense texture but without heaviness. The finish is long, slightly bitter, with a return of spices and grape skin that signs the style.
Agreement: Digestive by excellent, to taste alone, with a chocolate square 75% "Canaima" - great cru from Venezuela - from the Bernachon house. With a cigar, Davidoff Nicaragua Robusto or Trinidad Vigia, or a few dried fruits (figs, dates) and candied fruit flakes to soften power.
VIGNIFICATION & ElevATION
Observance of the winery charter in organic and biodynamic wine, thermo-regulated alcoholic fermentation with native yeasts, breeding on lees 8 months in stainless steel vats.
