Tasting Comment
Dress: Clear gloss, very light reflections of light straw according to aromatic concentration.
Nose: Mirabelle ripe, almost confit in the sun, with notes of nucleus, light honey and plum blossom. The fruit is round, warm, but remains clean.
Mouth: Gentle mouth in attack (without sugar, but with a roundness of fruit), then the alcohol structure resumes hand. The mirabelle stretches long, on a register both greedy and dry, with a warm but controlled finish.
Agreement: In digestive, on a mirabelle pie, a warm brioche, a yellow fruit cake, or counterpoint of a slightly refined soft cheese.
