Tasting Comment
CLEMENT SUMMER Finalist Competition of the Best Sommelier of France 2024
Dress: Gold dress, brilliant and clear.
Nose: The nose is worn on the freshness. The aromatic balance between the confit lemon, the cedrat and the Buddha hand. The spicy complexity densifies the wine palette.
Mouth : The attack is fine, crystal clear. The delicate and precise aspect is carried away by a dense, vibrant mouth medium. The material is growing in scale and is able to maintain a brilliant precision. The acid structure makes the wine unfold and discovers a tonic and long finish. Very nice bottle.
Agreement: Filet Saint-Pierre, Heart of artichoke lacquered with poultry sugar, quinoa blown.
VIGNIFICATION & ElevATION
Compliance with the winery charter in organic and biodynamic wine, thermo-regulated alcoholic fermentation with native yeasts, breeding on fine lees in lightning for 18 months. Bottled: 20 May 2025
