The shop

Dress: Yellow very pale or colourless slightly golden, shiny, with a slight viscosity to the glass that betrays the sweetness.

Nose: Pear well ripe, very expressive, almost confit, with hints of poached pear, light vanilla and white honey.

Mouth: Soft and caressing palate, where the pear spreads in width. The sugar carries aromatic without crushing, the finish remains fresh if the service is fresh, with a juicy pear return.

Agreement: Serve very fresh, alone or with a few ice cubes, on pear desserts (tartes, Belle-Hélène pears, crumble), or as a discreet nap on vanilla ice cream or pear sorbet.
