A grey pinot of broad but held hillside, where the texture and the slight noble bitterness prevail over the sugar.

Cremated poultry, foie gras, tajines with dried fruits and moderately powerful washed cheeses.
Tasting Comment
Dress: Pale gold, with slightly coppery reflections.
Nose: Mature Mirabel, fresh pear, hint of smoky and sweet spices.
Mouth: Wide but held material, vertical dynamic imposed by limestone, noble final bitterness that tightens and prolongs. Pinot gris de coteau, more textured than sugar.
Agreement: Cremated poultry, fried foie gras, sweet-salted dishes, dried fruit tajines, moderately powerful washed cheeses.

Compliance with the winery charter in organic and biodynamic wine, thermo-regulated alcoholic fermentation with native yeasts, breeding on fine lees 50% stainless steel 50% oak lightning for 6 months.
